Having
worked side by side with a Master Sommelier for some time to
learn more about food and wine, Simon decided that he wanted
to teach others just how particular foods can taste when
enhanced by certain wines and vice-versa.
From there
on, the family business Bon Vivant was born and has grown
from strength to strength since.
During his time there, he received vast
training in food and wine, which in return inspired him to
create a unique concept as Bon Vivant. He has worked with
chefs and vineyards from around the world to create a six
course menu starting with an amuse
bouché,
pre-appetiser, appetiser, entree, dessert and finally the
cheese course. These would complement the wines selected, in
flavour, complexity, and acidity.To further educate his
knowledge of wine, Simon spent extended summers in the heart
of Italy, Tuscany. Visiting the different vineyards and
seeing the process and care that is taken to make the wines,
Simon's affinity for Italian wine and Italy itself, grew
ever stronger. Now he frequents the area at least once
a year to source good quality wine. His wine list consists
of over 100 Italian labels.
Simon
Gibson is the director and chef of Bon Vivant Catering.
He is
responsible for compiling your menu and recommending the
wines to complement the dishes.
Simon
worked as a lawyer before he decided to follow his real
passion as a chef. He has taken an interest in cooking since
he was a young boy when he proudly presented a Moussaka to
his family aged just 6!
Simon had
the opportunity to work in Boston, U.S.A in one of the
world’s finest wine hotel-restaurants, boasting 100,000
bottles in the cellar. This encouraged him to learn more
about food and in particular, how wine can enhance different
tastes and
flavours.
Aside from
work, Simon is also a family man. The importance of ‘good
living’, or bon vivant is very close to Simon’s heart. The
birth of his first child Saffron, has made him more
conscious about the food we eat and what we feed our
children. Therefore where possible, Simon uses
organically grown vegetable and does not use any
preservative in his food.
